Bread that remembers
where it came from.

Avyan Bakehouse didn’t begin as a business plan. It began as a home oven that never got to rest — loaves for neighbours, cakes for birthdays we weren’t even invited to, and a kitchen that smelled like somewhere you wanted to stay.

It started with one oven
and too many requests.

The first loaves were baked for friends. Then friends of friends. Then strangers who’d tasted a slice at somebody else’s table and tracked us down to ask, a little sheepishly, whether we sold the stuff.

We did not. And then, quite suddenly, we did — one oven, a borrowed folding table, and a sourdough starter that has been alive longer than some of our customers’ children.

That starter still raises every loaf we sell. The folding table retired. The habit of baking like it’s for someone we know never did.

While the city sleeps,
we’re wide awake.

Every bake you order follows the same slow night. This is what your bread was doing while you were dreaming.

Flour, water, levain

The day ends for everyone else; ours begins. Doughs are mixed by hand and left to rest.

Shaping in the quiet

Each loaf is folded and shaped one at a time. No two are ever quite identical — that's the point.

4 AM

Ovens roar to life

Steam, heat and patience. Crusts crackle as the first batches come out singing.

6 AM

The counter fills

Croissants blister, cakes get their crumb coats, and the shelves fill while the city sleeps in.

Patience

Thirty-six hours of fermentation cannot be rushed, faked or bought. We wait, so the flavour arrives.

Honest ingredients

Flour, water, salt, butter, time. If we can't pronounce it or picture it growing, it stays out of the bowl.

Warmth

Bread is a gift you can eat. Everything we send out should feel like it came from a friend's kitchen.

Craft over scale

We'd rather sell out than stock up. Small batches keep our hands in the dough and our standards high.

These days the counter holds 50+ different bakes across 12 families — breads, cakes, pastries and more — and our bikes reach every doorstep within 12 km. What hasn’t changed: everything is still baked the night before you eat it, and nothing leaves cold.
